The Chinese tea tree is an evergreen shrub or small tree that grows up to 10-15 metres tall, but is mostly cut to a height of up to 2 metres for better leaf harvesting.

Green tea, oolong, black tea, white tea, and pu-erh are all made from this species of tea tree, but they are processed differently to achieve different levels of oxidation and, in the case of pu erh teas, different degrees of fermentation.
