In Japan, the term Kiwami (極) signifies the ultimate, the pinnacle of perfection – a title reserved only for creations that embody the highest level of skill, purity, and respect for tradition. This organic Matcha Kiwami from the Kagoshima region fully lives up to that name, crafted with devotion and precision from the Saemidori cultivar.
The name Saemidori (冴え緑) means bright green, perfectly describing the vivid colour and freshness of the first spring leaves. This rare, early Japanese cultivar is cherished for its rich umami taste and deep, vibrant hue – hallmarks of truly exceptional tea.
Matcha Kiwami is made from shaded Gyokuro leaves, gently steamed using the asamushi method and carefully dried to resemble the traditional Tencha processing style. After removing the veins, the leaves are slowly stone-ground into an ultra-fine powder – funmatsucha. The result is a tea that combines fresh aroma, elegant character, and a luxuriously smooth taste with minimal bitterness.
This tea is a masterpiece from Mr. Sakamoto, a renowned tea grower from Kagoshima. His garden, situated around 200 meters above sea level, benefits from ideal soil and microclimate conditions. With more than 30 years of experience in organic cultivation, Mr. Sakamoto has perfected his own natural fertilizer, which contributes to the deep umami richness and outstanding balance of this Matcha.
Produced in the old-fashioned way – as it was before the development of modern tencha-ro dryers – Matcha Saemidori Kiwami offers a pure, refreshing aroma, brilliant green color, and full, silky-smooth taste with minimal bitterness. It is the true pinnacle of Japanese tea artistry – Kiwami.
